Vegan Peach Raspberry Cobbler April 17, 2009

The following recipe was found in the  Fitness Ridge cookbook. They served this one night for dessert and I really enjoyed it (I actually wanted to swipe my sister’s piece while she wasn’t looking!).  It is so simple and so easy to make. It is good all by itself but I won’t lie to you; I think it would be great topped with a little vanilla ice cream (soy or regular).

This recipe just goes to show you that you don’t have to give up dessert to live a healthy lifestyle. :)  


Peach Raspberry Cobbler – Serves 9

3 cups frozen peaches

1 cup fresh raspberries (I used frozen because that is what I had on hand)

1/8 cup maple syrup

1 tbsp. cinnamon 

3 tbsp. fructose 

 

Topping: 

3/4 cups instant oats divided into 1/4 cup and 1/2 cup 

1/4 cup pecans 

1 tbsp. soy butter

1 tsp. cinnamon

3 tbsp. fructose

 

Pre heat the oven to 350 degrees. In a 9×9 pan, spray the bottom with non-stick spray. Layer fruit on the bottom of the pan and drizzle with maple syrup. Sprinkle the cinnamon and fructose over the rest of the pan. 

 

For the Topping: 

In a food processor, add 1/4 instant oats, pecans, soy butter, cinnamon and fructose. Blend until all lumps are gone and everything is evenly chopped. Add to a mixing bowl with the remaining 1/2 cup of oats and mix together. Sprinkle the topping over the fruit and bake for an hour or until the fruit sets (I baked for 45 minutes). Cool for at least 15 minutes and serve.

 

Top Chef Season Premiere & Apple Crisp November 13, 2008

So last night was the premiere of my most favorite show… TOP CHEF! This season the chefs are competing in New York and the very first episode did not disappoint. It looks like the level of talent is incredibly high and that this is going to be a very exciting season.

 

The quickfire challenge looked incredibly difficult and I know for a fact that there is no way I could have peeled that many apples with a pairing knife in a such time crunch without mutilating my fingers (one chef did almost take off his thumb and still kept peeling!!)

In honor of that challenge I have attached a very yummy recipe for an Apple Crisp which I found on The Post Punk Kitchen website. Apples are in season right now and there are so many wonderful varieties you could use. I happened to buy a beautiful bunch of granny smith apples so that is what I opted to use. Enjoy! :)

Sweet Potato & Zucchini Bread (Muffins) September 18, 2008

After I blogged about those sneaky spinach brownies that weren’t to my particular liking a few weeks ago my best buddy Chelsea sent me a recipe that she had she revised for the following nutrient packed veggie bread. She actually turns the recipe into muffins which when topped with a homemade cream cheese frosting makes them more like cupcakes. Omigosh! These little tasty treats were sooooo… good.

 

Her revisions to the recipe are as follows (I followed her revisions exactly)

- Whole wheat flour instead of white flour

- 1 cup of sugar in lieu of 2 cups

- 1/2 cup apple sauce and 1/4 cup oil in lieu of 3/4 cup oil

- 1 tsp. baking powder in lieu of 1/4 tsp. baking powder

When cooked as muffins, cook for 22-26 minutes.

 

Chelsea usually serves these muffins with breakfast but she suggested that homemade cream cheese frosting would make them more “treat-like”. My frosting was made up of 1 cup fat free whipped cream cheese, 2 tbsp. honey, 1 tsp. vanilla, 1 tbsp. sugar, 1/4 tsp. cinnamon and 1 tsp. lemon juice. All ingredients were mixed with a handmixer. After I frosted the muffins I topped them with an  equal mixture of brown sugar and chopped walnuts.

Sneaky, Sneaky Brownies August 12, 2008

Last week I made those sneaky spinach brownies from the Deceptively Delicious cookbook by Jessica Seinfeld.  I followed the recipe to a tee with one exception – I gently mixed in a handful of whole chocolate chips to the batter before I poured it in the pan. 

My final verdict is that they were “okay”. I think they would be great for moms trying to sneak nutrition into sweets for their young children with less discerning palates. But for me… I would rather save my calories for the real deal. I don’t really have that big of a sweet tooth so if for some reason I feel like a brownie… I want one that tastes AMAZING! The spinach brownies weren’t bad; they just had an after taste that wasn’t to my personal liking. At first my boyfriend didn’t love  them either but after they were packed in his lunch all week they kind of grew on him. He even said that I should make them again.  SO… maybe I am the only brownie snob in our house. I am attaching the recipe; you never know… these sneaky spinach brownies might just be the perfect brownies for you. :)

Almond Blueberry Cookies (Scones?) July 16, 2008

When I went online to FoodNetwork.com to print out Giada’s recipe for the Penne with Beef & Arugula that I made earlier this week I saw the following cookie recipe from the same episode. Anyone who knows me knows that I really don’t bake but I thought why not; I’ll try these. I followed the recipe exactly, even used measuring cups and spoons (I made a right old mess too). The cookies turned out great. They taste like little blueberry scones. In fact I am going to call them scones from now on that way I can justify the fact that I had one with my morning tea. ;)  

The lemon zest and the toasted almonds added so much flavor. YUMMMY!
